I love my truffle shaver. I was a little confused when it came becuse the box says chocolate shaver. Well, it does both. I had bought several bottles of black truffles and tried slicing them with a ceramic knife. That worked but the shaver slices them paper thin which is much better.
I now also use it for shaving chocolate for ganache. However, one must be very careful using it as it is extremely sharp and one can easily cut themselves with it which I did the first time I used it.

Comments about Truffle Shaver:
I use this to slice fresh Italian truffles and it does a great job. The slices can be paper thin or thicker (for cheese). It is hard to find a good truffle slicer and I found it in this one.
I make my own Bresaola, and when I serve it, I add Parmigiano. The other tools I have for shaving Parmigiano, does not do as good a job.
