One of our favorite cheese makers, Cypress Grove Chevre®in California, specializes in the finest goat-milk cheeses available. Here, we offer three of their absolute best. Humboldt Fog Mini, with its center ribbon of edible ash, is a soft, surface-ripened cheese with a creamy texture and a subtle tangy flavor. Purple Haze gets unexpected flavor and color from lavender and wild fennel pollen. And nutty and buttery Midnight Moon is aged at least six months, giving it a dense, smooth texture and the crystallization that comes from aging.
