Original Buffalo Chicken Wings


This is the most famous chicken wing in the world, of course. Today, lots of people are misguidedly baking the wings to save a little fat -- but the dish, to us, tastes right only when the wings are deep-fried, as in the original, to a crunchy golden brown. The juxtaposition of hot wings, blue cheese dressing and celery sticks may seem a bit odd and arbitrary when you first taste it -- but after you get used to classic Buffalo wings, with their classic accompaniments, you find that the dish isn't the same without them. Frank and Theresa never fully divulged their secret recipe for the dish, but a Buffalo, New York, journalist swears that the following is as close as anyone can come. Serves 8 as an appetizer

Ingredients:

  • 24 chicken wings (about 4 pounds), tips removed
  • salt and pepper to taste
  • 1 quart vegetable oil
  • 1/2 stick (1/4 cup) unsalted butter
  • 1/4 cup Louisiana hot sauce, or more to taste
  • 1 tablespoon white vinegar
  • celery sticks as an accompaniment
  • blue cheese dressing as an accompaniment

Directions:

  1. Cut wings in half, and season them well with salt and pepper.
  2. Heat oil to 375 degrees. Fry the wings, in 2 batches, until crisp and golden brown, about 10 minutes for each batch. Remove and drain on paper towels.
  3. Melt the butter in a saucepan, and add the hot sauce and vinegar. Stir to blend. Dip the wings into the sauce, and place wings on a serving plate. Pour any extra sauce over wings. Serve with celery sticks and blue cheese dressing.
