The Province of Modena is considered the home of true balsamic vinegar, where experts take the must of grapes, reduce it to a concentrate and then allow it to age like fine wine. Both of these balsamicos are certified as tradizionale (aged for at least twelve years) by the Consortium of Producers of Traditional Balsamic of Modena. It just doesn't get any better than that.

      Comments about Extra Vecchio:

      This is the genuine, 100% real balsamico made the traditional way in Modena, with the badging and certifications to match it (kind of like a real Champagne or Reggiano, strict formulas and geographies are the only way you can call your product this). Its rich and complex and amazing on fresh bread, a few drips on a salad, or with some shaved parmigiano. You won't find a better balsamico. All that said... the bottle is deceptively small which you don't realize from the photos (its about the size of three golf balls) so this is an expensive/guilty pleasure, for sure.

      Bottom Line Yes, I would recommend this to a friend
